Elmax® Powder Steel

Carbon: Along with iron, carbon is the base element in all steel. It increases edge retention, raises tensile strength, increases hardness and improves resistance to wear and abrasion.

The backbone of all steel.

Vanadium: Increases wear resistance and edge retention. At ~2800 Vickers, vanadium carbide, is among the hardest carbides seen in steel. Elmax has 30x more V than the most popular German steel.

Chromium: Leads to the formation of a chromium oxide layer on the blade surface which protects the steel from rusting.

3rd generation powder steel. Small & homogenous carbides make for a tough (hard to chip) steel, despite high alloy content. Knives can be ground thin as a result. 3.0% vanadium (~2800 Vickers) lends itself to very high wear resistance. Together, these allow for a thin and tough knife that stays sharper longer. 60+ Rockwell for best results.
Ingot steel. Mid-sized & heterogeneous carbides, combined with thin grinds, create potential for severe edge damage. Knives should be ground a bit thicker with less acute edge geometry to avoid edge failure. Given high carbon content, these knives can cut well for long periods, if used gently. 59-62 Rockwell for best results.
Ingot steel. Large & heterogenous carbides create potential for severe edge chipping, despite low alloy content. Knives should be ground thick, with wide edge angles. Therefore, these knives are typically heavy, cut poorly, and dull quickly. 52-57 Rockwell for best results.
Ingot steel. Small and homogeneous carbides, with low alloy content makes for a tough, but very low edge-retention steel. Knives should be ground thin with acute geometry given how quickly the edge will dull. 60+ Rockwell for best results.

Awesome knife for pretty much any meal preparation work!

I purchased my Artisan chef's knife after purchasing its companion paring knife and being impressed with its design, its meticulous craftsmanship, and its great overall performance (cutting ability, fit in my hand, comfort and usability).

I have to say - the chef's knife checked all the same boxes for me. It's a really well made blade, perfectly sized and balanced and finished to that it feels like an extension of your hand when you use it.

It uses a truly premium steel, is wicked sharp, and holds an edge well without being at all fragile - it's a knife I feel very comfortable using every day for prep work.

Do I baby it a little? Sure. It's a lovely piece, and I don't have to deal with a lot of bones or hard veggies (squash, pumpkin) - but I have a heavy -bladed knife for that work. I'm sure it would handle the squash OK, but those rare occasions give me the chance to bring out the heavy blade.

For the other 99% of prep work - it's a fabulous tool that brings a smile to my face every time I pick it up.

Exceptional knife - highly recommend

I've used hundreds of different knives over the years. I'm retired now but I cook daily and often cook for many people. I've counted on good quality chef knives my whole life. This knife far exceeded my expectations.

My first observation was how well the knife fits in my hand. It was comfortable yet sturdy, and I could tell I would be able to cut for long periods in the kitchen in comfort.

Next, I started cutting some vegetables for potstickers. The knife glided through a whole white cabbage with ease. I was able to cut super fine shreds of cabbage, onion and garlic because of how razor sharp the edge was. It was notably sharper than any other kitchen knife I have ever owned.

There's a movie called Kill Bill that I saw once before when an old samurai warrior who made a katana commented on how sharp the blade was. He said," if you need God on your travels, then God himself will be cut". I think he was talking about this knife. The blade and point were exceptionally sharp. I used this knife to trim a whole tenderloin roast. I was able to shave the sinew super close! It was amazing how it glided through the meat. It was sharper than my filet knife.

Finally, the design and aesthetics of this knife are beautiful. It was simply worth every penny I spent on it. I would have purchased a knife like this years ago had I known what a difference it would make cooking. It's just simply a pleasure cutting things with this knife.

It’s like a laser!

Awesome packing, box, and presentation.
The box is heavy, but the knife is feather light, and glides through fruits and veggies like a laser. Mine came with a unexpected leather storage sheath. This was a very nice, practical bonus for safe storage. Overall the knife is comfortable and fun to use. I look forward to chopping onions and other cutting meal prep with my Artisan Reserve chef knife. I own Shun Fuji, and Kramer Damascus chef knives. Neither one cut this well out of the box, and both gets tiny micro chips which are difficult to prevent and correct. I am excited that I don’t need to worry about micro chipping on the Artisan Reserve.
